Let's Talk about Tofu

Hi from Hong Kong. I’ve just returned from a few days in Zhongshan where I spent my time either eating greens cooked in different types of broth or getting tui na massages (my practitioner performed gua sha using her knuckles, my back is still showing its effects). I’m heading to Taipei next. Have you been? Send me your recommendations.

Since I got here I’ve been enjoying tofu at most meals. It’s a regular for me in London but when I’m on this side of the planet, I tend to have more. There’s a stall in the wet market near my parents’ house that sells blocks of the silkiest tofu - we buy it fresh and add it to fish soup where it dances flirtatiously amongst the quartered tomatoes and sliced onions. Delicious.
